My absolute favourite is sykes.c, which is a Commodore PET emulator.
(For those of you not familiar with the rules of the IOCCC, that means that it's a Commodore PET emulator, whose source code is a single file that's less than 2K long.)
The quine that's actually a Common Lisp implementation is pretty cool too.
